Long before nonstick coatings and stainless steel became kitchen defaults, black clay was already doing the job better in one specific way: flavour. Dal, curries, and slow-cooked stews pick up a depth in black clay that metal pots don’t produce, largely because the clay holds and releases heat gradually instead of spiking and dropping the way thinner materials do.

This pot is shaped by hand from naturally black-firing clay, using techniques that haven’t really changed in generations. The surface is burnished — worked smooth with a stone before firing rather than coated with glaze — which is what gives it that deep charcoal finish, one that actually deepens further with regular use rather than wearing away. A fitted clay lid comes with it, sealing in both heat and moisture while cooking.

There’s no synthetic coating anywhere on this pot, which means it’s genuinely non-toxic in the most literal sense — nothing to leach, nothing to flake off over time. It also behaves almost like a living object in the kitchen: the more you cook in it, the more it absorbs a kind of seasoning from repeated use, and performance actually improves the longer you own it. The fitted lid matters more than it might seem — it traps steam during cooking in a way an ill-fitting or borrowed lid can’t, which is part of why dishes made in this pot end up more tender than the same recipe cooked uncovered in a regular saucepan. Burnishing the surface with a smooth stone before firing is also a slower process than most cookware finishing techniques, since it’s done entirely by hand rather than sprayed or dipped, which is a large part of why this specific black finish can’t really be replicated by machine.

Care Instructions

  • First use — Fill with water and simmer gently for 15–20 minutes before cooking with it — this opens the clay pores and strengthens the pot.
  • Cooking — Gas flame, low to medium heat only. Warm it gradually — never place a cold pot straight onto a hot flame.
  • Washing — Warm water only, no soap inside the pot — a soft brush handles most residue.
  • Drying — Air dry fully before storing; never seal the lid on a damp pot.
  • Skip entirely — Induction, microwave, dishwasher, and hard-surface drops.
  • Over time — Performance and flavour both improve the more this pot gets used.
